About Us

Founded in 2020 by Chef Marcos Ascencio and Oliver Poilevey, the original Chingón became a cult favorite in Bucktown, known for its unapologetic flavors, signature Al Pastor trompo, and weekly specials that pushed the boundaries of what a taco could be. It was a small space with a big personality - born during a pandemic, powered by grit, and sustained by a loyal neighborhood following.

In 2025, Chingón returns. This time, in the heart of Chicago’s West Loop, we’re doing it bigger—but not louder. We’ve kept what made us special: fire-kissed trompo al pastor, tacos that taste like a chef dreamed them up (because one did), and a team rooted in Chicago’s culinary tradition. But this new chapter lets us expand the vision—more menu, more mezcal, more room to gather and get a little messy.

We’re still the neighborhood taqueria, just in a new neighborhood. And we’re still obsessed with every detail—from the masa to the playlist."
